Step-by-Step Instructions
Marinate the Chicken
- This is where the magic starts.
- Place your cubed chicken in a large zip-top bag or bowl.
- Pour in the dill pickle juice, olive oil, and your spices (garlic powder, onion powder, salt, and pepper).
- Seal and shake to coat, or stir well if using a bowl.
- Let it marinate in the fridge for at least 2 hours, but overnight gives the best flavor and tenderness.
- Tip: Don’t skip the marinating—this is what makes the chicken so juicy and flavorful!
Prep the Skewers
- If you're using wooden skewers, soak them in water for 30 minutes to prevent burning.
- Thread the marinated chicken pieces onto the skewers, leaving a bit of space between each piece to help them cook evenly.
Preheat Your Grill or Grill Pan
- Heat your grill (or stovetop grill pan) to medium-high heat.
- Lightly oil the grates or spray the pan with nonstick cooking spray to avoid sticking.
Grill the Chicken Skewers
- Place the skewers on the grill and cook for 10–12 minutes, turning occasionally to get a nice char on all sides.
- The chicken is done when it reaches an internal temperature of 165°F and has golden-brown edges.
Rest and Serve
- Remove the skewers from the grill and let them rest for a couple of minutes.
- This keeps the juices locked in and makes every bite extra delicious.
